- Tilapia - 2 pieces
- 1 small container grape tomatoes cut in half
- 2½ cups of spinach
- 1 zucchini sliced
- 2 tsp. Olive Oil
- Garlic Powder
- Himalayan Sea Salt
- Old Bay Seasoning
- Red Pepper Flakes
- Slices of fresh lemon
- Heat olive oil in large frying pan
- Cook Tilapia for about 4 minutes on each side until golden brown
- Season with a few shakes of garlic powder, red pepper flakes, Himalayan sea salt and old bay
- *add in as much of the seasoning as you'd like. We use a few shakes of each on each piece of tilapia, and then season again for all vegetables.
- Remove Tilapia while cooking veggies in same pan.
- Add in Spinach - cook on high until spinach is almost soft
- Add in tomatoes and zucchini - cook until zucchini is almost clear (not mushy)
- Season all vegetables with garlic powder, red pepper flakes, and old bay.
- Add tilapia back into mix of veggies.
- Squeeze fresh lemon evenly and mix vegetables one last time.
Healthy fats and Omega-3’s are needed to maintain a healthy nutrition plan. I never used to like fish, ANY fish. Actually the smell of fish used to make me seriously gag. As I became older I started to enjoy fish – I guess taste buds have changed and I’ve also grown wiser to “healthy foods.” There is plenty to debate about which fish are “good” for you and which aren’t… I’m not up for a debate, folks. I’m just giving you another great recipe to enjoy!
