Crockpot Beef and Broccoli

This beef and broccoli recipe tastes delicious atop a bed of brown or wild rice.  You can even wrap it altogether with a lettuce wrap.  I usually add in some crushed red pepper flakes for some additional heat.  Every crockpot cooks differently so play with the timing a bit.  When you pull the beef apart with your forks it should peel away easily.  If not, cook it a bit longer until it’s very easy to pull apart.  Enjoy!

Simple beef and broccoli crockpot recipe - tastes great atop a bed of brown or wild rice, or serve with additional steamed veggies!
Ingredients
  • 2 lb Flank Steak cut into strips, width-wise (this makes for easier shredding at the end!)
  • 2 cups fresh broccoli, chopped
  • 4 green onions, sliced length-wise (optional)
  • ½ C low sodium Beef Broth
  • 2 T liquid aminos (great substitute for soy sauce)
  • 2-3 cloves minced garlic
  • 1 t ground ginger
  • 1 t onion powder
Instructions
  1. Spray crock pot with non-stick Olive oil spray
  2. Place flank steak in crock pot.
  3. If using green onions, sprinkle on top of steak.
  4. Mix together beef broth, liquid aminos, garlic, and spices, and pour over meat.
  5. Cook on low 6 hours
  6. Shred beef using 2 forks and add broccoli.
  7. Cook an additional 30 minutes, or until broccoli reaches desired tenderness.
