Chocolate Chip Pancakes

These chocolate chip pancakes have proven to be a kid favorite at many of our Fit Kids Factory programs.  Kids love the melted chocolate and berry combination!  No more nagging kids to come to the breakfast table with these goodies… Add in any fruit you’d like, we usually go with berries or half a banana.  Also delicious with a bit of peanut butter smeared on top!  Delicious!

Delicious way to begin your day.... chocolate chip pancakes will make it easy for all moms to say "come eat your breakfast" as kids will come to the table quickly for these!
Ingredients
  • 2 cups whole wheat flour or all purpose gluten-free flour
  • 3 tsp. baking powder (gluten-free if you'd like)
  • ¼ tsp sea salt or Himalayan salt
  • 2 tsp ground cinnamon
  • 2 tsp sugar, pure maple syrup, or raw honey
  • 2 large eggs
  • 2 cups unsweetened almond milk
  • 2 tsp vanilla extract
  • ¼ cup dark chocolate chip morsels
  • cooking spray
  • ½ cup blueberries or any other berry of your choice if you'd like to add fruit
Instructions
  1. Preheat griddle and spray with non-stick spray.
  2. Blend all ingredients.
  3. Pour circles onto griddle.
  4. Flip pancake when bubbles begin popping.
  5. Cook until golden brown.
  6. Drizzle raw honey or syrup on top. (not much needed since chocolate chips will make it sweet!)
  7. Add berries atop if you'd like.
