Buffalo Chicken Quinoa Muffins

These little bite sized muffins are delicious and make the perfect healthy appetizer to take to any party or game!  We love most buffalo chicken type apps…. but most of them are loaded up with cream cheese, sour cream, buttermilk ranch, and tons of cheese.  This is the perfect “healthier” option for those who love the flavor without the calories!  Dip them into the cleaned up ranch dip recipe you can also find on our site!

Buffalo Chicken Quinoa Muffins

Buffalo Chicken Biscuits make the perfect appetizer for those looking for a healthier choice without losing the flavor!
Ingredients
  • 1½ cups shredded cooked chicken
  • ¼ cup hot buffalo sauce - I prefer Frank's Red Hot Buffalo Wing Sauce
  • 1 egg, beaten
  • 1 egg white
  • ¼ cup low-fat sour cream or 1-2 ounces cream cheese
  • ¼ cup plain Greek yogurt
  • 1 cup low-fat shredded cheddar cheese
  • 1 cup cooked quinoa
Instructions
  1. Preheat oven to 350 degrees
  2. Combine all ingredients together - mix well
  3. Scoop into greased small mini-muffin tin (24 muffins)
  4. Bake 18-22 minutes until golden brown
  5. Allow to cool and top with buffalo dip
  6. Dip:
  7. Combine 1 cup plain Greek yogurt
  8. /2 cup buffalo sauce - you can add in more if you like it really HOT
  9. packet of ranch seasoning
  10. Remember: when dip sits it will become slightly runny as it separates, mix it well before serving.
