- 1 15.5 oz can of black beans - rinsed and drained
- 3 eggs
- 3 tbs. coconut oil PLUS some to coat pan
- ¼ cup unsweetened cocoa powder
- 1½ tsp. vanilla
- ½ tsp. baking powder
- 1 cup organic sugar
- 1 pinch salt
- ⅔ cup dark chocolate chip morsels
- Preheat oven to 350 degrees
- Coat an 8x8 inch pan with melted coconut oil
- Mash beans in processor or blender until smooth
- Add eggs, coconut oil, cocoa powder, vanilla, baking powder, sugar, and salt
- Pour into pan
- Sprinkle chocolate chips evenly on top
- Bake in oven 30-35 minutes until fork comes out clean after poking center
- Let brownies cool completely before cutting into squares.
Most of you know that I am a chocolate lover. Make no mistake about it, I love ALL things chocolate. Most of the time I try not to have anything chocolate in my house because I have very little will power when it comes to that dark and glorious sweetness! I made these black bean brownies for a recent Beachbody Steelers Party and they were a HUGE hit! And while I understand they aren’t completely clean or healthy they sure are better for me than that hot lava triple chocolate cake that I used to devour! hahahh Hope you enjoy these as much as our guests did at the party!
