Black Bean Brownies - a healthier chocolate choice.
Ingredients
  • 1 15.5 oz can of black beans - rinsed and drained
  • 3 eggs
  • 3 tbs. coconut oil PLUS some to coat pan
  • ¼ cup unsweetened cocoa powder
  • 1½ tsp. vanilla
  • ½ tsp. baking powder
  • 1 cup organic sugar
  • 1 pinch salt
  • ⅔ cup dark chocolate chip morsels
Instructions
  1. Preheat oven to 350 degrees
  2. Coat an 8x8 inch pan with melted coconut oil
  3. Mash beans in processor or blender until smooth
  4. Add eggs, coconut oil, cocoa powder, vanilla, baking powder, sugar, and salt
  5. Pour into pan
  6. Sprinkle chocolate chips evenly on top
  7. Bake in oven 30-35 minutes until fork comes out clean after poking center
  8. Let brownies cool completely before cutting into squares.
