Need a quick and easy snack? This healthy snack only calls for 4 ingredients! I love simple. I love simple and healthy even more. Give these zucchini salsa bites a try next time you are craving nachos or chips.
- Zucchini - sliced down- not too thin or it will become mushy
- Coconut Oil or Olive Oil
- Salsa - choose your brand. We like the heat in my house!
- Low-fat Colby Jack cheese or Mexican Cheese blend
- Himalayan Salt and Pepper - optional
- Pre-heat oven to 425 degrees.
- Slice zucchini and place in dish. Cook in microwave 3-4 minutes.
- Place zucchini onto baking sheet.
- Add spoonful of salsa atop each.
- Add small amount of cheese to each.
- Drizzle small amount of coconut oil or olive oil to each.
- Bake in oven for about 10 minutes or until zucchini is soft to your liking.
- Remove from oven and allow cheese to settle for a few minutes.
