I am a simple lady – I like simple meals. This is one of the tastiest dinner recipes that my hubby came up. The hummus crisps up and gives a “baked/fried” feeling. It is delicious!
- 1.5-2.0 lb. Boneless, Skinless Chicken Breast
- Sabra Roasted Red Pepper Hummus
- 2 Roma Tomatoes
- 1 Zucchini
- 1 Red Pepper
- 3 Whole Carrots
- Preheat oven 425 degrees
- Coat glass baking dish with cooking spray
- Smear hummus over both sides of chicken
- Bake 25 minutes
- Slice tomatoes and lay them atop chicken
- Slice zucchini, carrots, and peppers and surround chicken with veggies
- Bake for an additional 20 minutes until vegetables are tender
