Simple chicken and avocado flatout is perfect for a quick lunch or dinner, or cut into squares and serve as an appetizer.

Ingredients
  • 1 Chicken Breast - cubed
  • 2 tsp. coconut oil
  • Old Bay or Cajun Seasoning
  • Roasted Red Pepper Hummus - about 2 tbls.
  • Broccoli Slaw
  • 1 medium avocado - diced
  • Flatout
  • Pepper
Instructions
  1. Smear thin layer of hummus onto flatout
  2. Rub edges of flatout with coconut oil
  3. Brown chicken in coconut oil - add old bay, Mrs. Dash, or cajun seasoning
  4. Place chicken onto flatout
  5. Cook broccoli slaw in same pan with coconut oil until softened
  6. Add thin layer of broccoli slaw tio flatout
  7. Toast in toaster oven or conventional oven until edges are golden brown
  8. Remove from toaster and top with diced avocado
  9. Pepper to tast
