Buffalo Chicken Quinoa Muffins

- 1½ cups shredded cooked chicken
- ¼ cup hot buffalo sauce - I prefer Frank's Red Hot Buffalo Wing Sauce
- 1 egg, beaten
- 1 egg white
- ¼ cup low-fat sour cream or 1-2 ounces cream cheese
- ¼ cup plain Greek yogurt
- 1 cup low-fat shredded cheddar cheese
- 1 cup cooked quinoa
- Preheat oven to 350 degrees
- Combine all ingredients together - mix well
- Scoop into greased small mini-muffin tin (24 muffins)
- Bake 18-22 minutes until golden brown
- Allow to cool and top with buffalo dip
- Dip:
- Combine 1 cup plain Greek yogurt
- /2 cup buffalo sauce - you can add in more if you like it really HOT
- packet of ranch seasoning
- Remember: when dip sits it will become slightly runny as it separates, mix it well before serving.
